And hop! A dry hopping
Does your recipe have a dry hopping? No problem ! Our brewery team has developed over the years a real expertise in the field. With dozens of different hop beers each month, your recipe will be showcased to the smallest of flavors.
Centrifugation
To produce free from any particle resulting from fermentation, all beers are centrifuged. If necessary, we can also filter your beer.
Flash pasteurization
The very high quality of our beers and the elimination of any risk of contamination is due, among other things, to the flash pasteurization that we apply before the bottling of each beer produced.
In addition to allowing a longer use-by date, this technique is also appreciated by distribution networks.
Dosage of sugar and yeasts
Does your recipe take the time of tradition? We carefully add sugar and yeast in each bottle for a second fermentation.
Bottled fermentation
If your recipe is based on a single fermentation, we can add CO2 to give it its sparkling, it will be sooner ready to be consumed in bottle or barrel. Count 4 weeks from its brewing to be able to taste your beer.
CO2 saturation
If your recipe is based on a single fermentation, we can add CO2 to give it its sparkling, it will be sooner ready to be consumed in bottle or barrel. Count 4 weeks from its brewing to be able to taste your beer.
The tasting
Our laboratory allows us to follow your recipe to the letter, to improve it according to your desires or, more regularly, to control the evolution of the fermentation process.
Every day, we carry out these different analyzes:
Physicochemical
• Primitive must (° Plato)
• Alcohol (% by volume and by weight)
• Real extract (° Plato)
• Apparent extract (° Plato)
• Degree of fermentation (%)
• pH
• Color (EBC)
Microbiological
• Aerobic and anaerobic study of your samples to track your production process
sensory
• Every day, a team of five people taste the beers ready for delivery. If the whole team agrees with the result of the production, a green light is given to recover them.
